Ingredients

  • 6 purple, yellow or sweet fingerling potatoes
  • pinch of salt
  • 1/2 teaspoon minced black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • olive oil or butter

Extra

  • 1/2 tablespoon chopped fresh parsley or sprig of rosemary
  • grated parmesan cheese

Instructions

  • Hand wash, scrub and soak fingerling potatoes until they are completely clean. Combine the three types of potatoes for this side dish.
  • Next, cut them lengthwise into halves.
  • In a bowl, prepare the spices and condiments. Combine black pepper, salt, onion, fresh parsley or rosemary, and garlic.
  • Spread the seasoning blend on the potatoes and drizzle olive oil over them.
  • Place them into the air fryer basket without overcrowding it.
  • Cook at 400°F (204°C) for 15 minutes, flipping halfway through. During the cooking process, keep an eye on the potatoes as they can become crisp once they turn golden brown (I like crispy ones).
  • Plate, top with parmesan cheese and enjoy.
