Ingredients

  • 4 boiled or baked russet or Yukon gold potatoes
  • 1 zucchini
  • 1 tablespoon oil or cooking spray
  • 1 cup white grated cheese
  • 1/4 onion
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 cup flour
  • twig of chive

Instructions

  • Peel the potatoes and smash them into a large bowl.
  • Then, cut into small squares the zucchini. Next, prepare the finely chopped onion and cut thin slices of chive.
  • Place zucchini, onion, egg, chive, cheese, salt in a large bowl. Mix everything very well together with the mashed potatoes.
  • Make a ball and flatten them to form pancakes with the mixture. When they have reached the form, put them in another container and drizzle flour on both sides.
  • Later, spray oil onto the pancakes.
  • Next, put pancakes into the basket of the air fryer at 380ºF (193ºC) for 10 minutes. Flip them once to cook both sides.
  • Lastly, serve and enjoy!
