Ingredients:

  • 2 cups cooked and cooled white rice (preferably day-old)
  • 1 cup mixed frozen vegetables (peas, carrots, and corn)
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (optional, adjust to taste)
  • 1 tablespoon green onions, chopped (optional for garnish)

Instructions:

Preheat the Air Fryer:

Set your air fryer to 360°F (180°C) and let it preheat for 3–5 minutes.

Prepare the Rice Mixture:

In a large mixing bowl, combine the cooked rice, frozen vegetables, garlic powder, onion powder, black pepper, and salt.

Drizzle sesame oil and soy sauce over the mixture and toss well to coat evenly.

Add the Eggs:

Push the rice mixture to one side of the bowl. Add the beaten eggs to the empty side.

Stir to scramble the eggs slightly, then mix them into the rice.

Transfer to Air Fryer Basket:

Spread the rice mixture evenly in the air fryer basket. Avoid overcrowding for even cooking.

Air Fry the Rice:

Cook at 360°F for 10–12 minutes, shaking the basket halfway through to ensure even crisping.

Check and Serve:

Once the rice is lightly crispy and heated through, remove it from the air fryer.

Garnish with chopped green onions and serve hot!

Pro Tip:
For added protein, toss in cooked shrimp, diced chicken, or tofu before air frying!
