- 1 tbsp demerara sugar, plus extra for sprinkling
- ½ tsp ground cinnamon
- 25g unsalted butter
- 320g sheet puff pastry, thawed slightly
- 1 medium egg, beaten
- Caramel sauce (optional)
Instructions
1. Prepare the Apples:
- Core and chop 2 of the apples into 1cm chunks.
- Place them in a saucepan with the sugar, cinnamon, and a splash of water.
- Cover and cook over medium heat for about 15 minutes, or until softened.
- Mash lightly with a wooden spoon.
- Core and finely chop the remaining apple (around 5mm cubes).
- Stir the chopped apple into the cooked mixture along with the butter.
- Cook for an additional 5 minutes, uncovered, stirring regularly.
2. Assemble the Turnovers:
- Cut the puff pastry sheet into 4 squares.
- Brush the edges of each square with the beaten egg.
- Spoon the apple mixture into the center of each pastry square.
- Fold the pastry over diagonally to form a triangle, sealing the edges with a fork.
3. Air Fry:
- Preheat your air fryer to 180°C (350°F).
- Place two turnovers in the air fryer basket, ensuring they don’t touch.
- Brush the tops of the turnovers with the remaining egg wash and sprinkle with a little extra sugar.
- Air fry for 15 minutes, or until golden brown.
- Repeat with the remaining turnovers.
Tips
- Allow the cooked apple mixture to cool slightly before filling the pastry to prevent soggy turnovers.
- If your air fryer basket is small, cook the turnovers in batches to avoid overcrowding.
- For a richer flavor, brush the turnovers with melted butter before sprinkling with sugar.
- Serve warm with caramel sauce, thickened cream, or a scoop of ice cream.
