Juicy Air Fryer Chicken Kabobs

These juicy and flavorful chicken kabobs are made with marinated chicken, colorful vegetables, and cooked to perfection in the air fryer. Quick, healthy, and easy to make, they’re perfect for a weeknight dinner or weekend BBQ!

Ingredients

  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1 zucchini, cut into chunks
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)

Instructions

Prepare the Chicken Marinade:
In a bowl, mix the olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper.

Marinate the Chicken:
Add the chicken cubes to the bowl and toss them in the marinade. Cover and let it marinate for at least 30 minutes in the refrigerator for the best flavor.

Prepare the Veggies:
While the chicken marinates, cut the bell peppers, onion, and zucchini into bite-sized chunks.

Assemble the Kabobs:
Thread the marinated chicken and vegetables alternately onto the skewers. Make sure they are packed tightly but not too crowded.

Preheat the Air Fryer:
Preheat the air fryer to 400°F (200°C) for about 3-5 minutes.

Cook the Kabobs:
Place the skewers in the air fryer basket in a single layer, ensuring there’s some space between them for air circulation. Cook for 10-12 minutes, flipping halfway through, until the chicken is fully cooked and the veggies are tender.

Serve:
