Ingredients

  • 500 g raw black beans
  • 1/2 onion
  • 1 garlic clove
  • pinch of salt
  • vegetable oil
  • cheese
  • 1 ripe plantain
  • 1 jalapeƱo pepper
  • tortilla chips

Instructions

  • Remove any rocks or impurities from the black beans. Then, thoroughly rinse until clear water appears.
  • Pour into a pot and cover with water. If you have time and want the black beans to cook faster, soak them overnight in clear water.
  • Add a slice of onion, a peeled garlic clove, and salt to taste. Bring to a boil, and add more water if necessary. Check to see if they have a good salt flavor and if they are already soft. If not, boil them until they are soft.
  • Blend them with as little black bean broth as possible.
  • In a pan, heat vegetable oil and stir-fry finely chopped onion. After that, add and fry the blended black beans until they are boiled and dried.
  • If they haven't dried yet, you can fry them twice and thicken them with a tablespoon of ground bread (optional).
  • Fry slices of ripe plantains to round out the Authentic Mexican refried black beans. JalapeƱos, chopped into fine cubes, fried tortillas to make tortilla chips or buy them.
  • Top the refried beans with crumbled white cheese and tortilla chips.
  • Serve and enjoy!
