Air Fryer Hasselback Potatoes

Ingredients

  • 2 medium Russet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon butter melted
  • 1 tablespoon chopped fresh herbs optional

Instructions

Step 1: Prep the Potatoes

  • Wash and dry your potatoes thoroughly. Place each potato between two wooden spoons or chopsticks and carefully slice thin slits (about ⅛ inch apart) down the length of the potato. The spoons will help stop your knife from cutting all the way through.

Step 2: Season the Potatoes

  • In a small bowl, mix olive oil, salt, pepper, and garlic powder. Brush this mixture generously over the potatoes, making sure it seeps into each slice. You can gently fan out the slices to get the seasoning inside.

Step 3: Air Fry

  • Preheat your air fryer to 375°F (190°C). Place the seasoned potatoes into the air fryer basket, cut side up. Air fry for 20–25 minutes, checking halfway to brush on more olive oil if needed.

Step 4: Add Butter and Finish

  • After 20–25 minutes, drizzle melted butter over the potatoes and cook for an additional 5–7 minutes until golden and crispy. Insert a knife into the center to check for tenderness.

Step 5: Garnish and Serve

  • Carefully remove the potatoes and sprinkle with fresh herbs if desired. Serve hot, and prepare for lots of compliments.
