Ingredients

  • 1 pound boneless, skinless chicken breast, cut into strips (around 1/2-inch thick)
  • 1 red bell pepper, sliced into 1/2-inch strips
  • 1 yellow bell pepper (or another color), sliced into 1/2-inch strips
  • 1 red onion, sliced into wedges
  • 3 tablespoons fajita seasoning
  • 1 tablespoon olive oil (or avocado oil)

Instructions

1. Preheat your air fryer to 390°F (200°C).

2. In a large bowl, combine the chicken strips, bell peppers, onion wedges, fajita seasoning, and olive oil. Toss everything together to make sure the chicken and vegetables are evenly coated with the seasoning and oil.

3. Lightly grease your air fryer basket with cooking spray or a touch of oil (optional).

4. Arrange the chicken and vegetable mixture in a single layer in the air fryer basket, making sure not to overcrowd it. If your air fryer is small and everything won’t fit in one layer, cook in batches.

5. Air Fry for 15 minutes at 390°F (200°C), shaking the basket halfway through cooking to ensure even cooking.

6. Check the chicken for doneness. The internal temperature of the chicken should reach 165°F (74°C). If the chicken isn’t cooked through yet, cook for an additional 2-3 minutes, checking for doneness again.

7. Once the chicken is cooked through and the vegetables are tender, remove the basket from the air fryer and serve immediately with warmed tortillas, your favorite fajita toppings like salsa, guacamole, sour cream, and chopped cilantro.

Tips

  • You can use pre-made fajita seasoning or make your own with chili powder, cumin, paprika, garlic powder, onion powder, and smoked paprika.
  • For extra crispy vegetables, you can drizzle them with a little extra oil before air frying.
  • If your chicken strips are thicker than 1/2 inch, you may need to increase the cooking time by a few minutes.
  • Be sure to keep an eye on your food while it’s cooking, as air fryers can cook food quickly and it’s easy to overcook it.
